Low-Carb Pizza-Stuffed Peppers


I don't feel like it's very necessary to start out a blog post by writing, "I like pizza." Because of course everyone already knows that nobody doesn't like pizza.  (Nobody doesn't know how to use double -- or triple or quadruple -- negatives like I do, either......) 

Back in late March, I began eating according to the Trim Healthy Mama lifestyle in an attempt to lose some weight. (I could call it baby weight, but who would I be kidding ;) )   And I've stuck with it.  (wow!)   The fact that this "food plan" (as my kids call it) allows for pizza automatically makes it a very manageable and sustainable plan in my world.  

Even though I haven't been enjoying hearty crusts anymore, I'm still eating pizza.  Or at least, pizza-tasting food.  (Some pizza purists may argue whether or not pizza fixings without the crust can truly be called "pizza" but I don't really have time for that kind of philosophizing in my life.)

So far I've thoroughly enjoyed the Trim Healthy Mama Fooled Ya Pizza Crust, which is made from cauliflower, as well as pizza "boats" in zucchini and yellow summer squash (it's really good in the green zucchini; it's very medium in the summer squash...)




Yesterday my family was having pizzas put together on spinach flat bread, and I didn't want that, didn't have and spare zucchini, and wasn't in the mood to go through the trouble of the cauliflower crust (though it IS tasty enough to usually go through the trouble!)  So I threw together these pizza stuffed peppers - all most of the taste of a pizza in under 15 minutes, with negligible carbohydrates.  

If you're willing to forgo the crust for health benefits, than this is a very respectable alternative.  (I've personally found I'm able to forgo the taste of many wonderful things for the sake of this "diet" because there are so many "respectable alternatives.")  

Here they are:

Halve and de-seed a bell pepper.  Spread a tablespoon of no-sugar-added pasta sauce in each.  Finely chop your favorite pizza toppings.  Stuff toppings into peppers and top with part skim / low moisture shredded mozzarella cheese.  I sprinkled some fresh oregano and basil from our garden on top as well.  Bake at 350 degrees for 10 - 15 minutes, then broil for 2-3 minutes or until cheese starts to brown.  Enjoy!  

(If you're using this as a THM S meal, you may need to add some additional protein depending on your toppings.)

Slow Cooker Chicken Sweet Potato Tacos (say it with me now... Mmm, Mmm, Mmm!)

I'm not kidding... my kids chant Mmm, Mmm, Mmm! when they find out we're having chicken sweet potato tacos for dinner.  Or lunch.  Or breakfast...  

For this recipe you will need a slow cooker and people.  And some other ingredients.  But the most important thing is the people because you need someone other than yourself to eat these amazing tacos and then love you for making them.

I thought I made up this recipe all on my own.  I mean, I did because one day I had the idea to just throw some sweet potatoes and beans into our regular chicken taco thing...  I thought I was a slow cooker taco genius!  But it turns out there are lots of people out there eating chicken sweet potato tacos.  If "my" recipe is similar to yours, it is coincidental, and isn't it awesome that we discovered the same delicious thing independently of each other in our various parts of the world?!?!

Anyway, here it is...


Ingredients

2 large chicken breasts
2 large sweet potatoes, peeled and diced
1 can diced tomatoes (I use the "no salt added" variety)
1 can Rotel (diced tomatoes with chilies)
2 packets taco seasoning (I use Ortega 40% less sodium.  I also know there are several recipes for making your own.)
1 can black beans, drained and rinsed

Put all ingredients except the beans into a slow cooker on High for 3-4 hours.  Check to see if chicken is cooked.  Once it's cooked, shred the chicken breasts, stir all ingredients well, and continue cooking for another 1 hour or so.  Add black beans, turn slow cooker to Warm until ready to serve.  

Serve in taco shells or flour tortillas.  Add taco "fixins" - cheese, lettuce, cilantro, sour cream, guacamole, salsa...)

Makes approximately 16 servings a 1/2 cup each. 

Eating with diabetes??  Here's your carb info: Each 1/2 cup has 13 carbohydrates.  Served on an 8 inch flour tortilla (25 grams of carbs) a chicken sweet potato taco would be 38 carbohydrates.  (As always, it's safest to do your own carbohydrate calculations, but this should give you a good idea.)

Last Day Before Vacation and my Sanity is Mostly Intact (SQT - Stuff I'm Loving for Our Road Trip)

We don't travel much.  Actually, we don't travel ever.  That's why packing for a vacation is a big enough deal to warrant it's own blog post.  I like being at home.  And I like routine.  So you can imagine my state of mind during these past few days that we've been preparing to leave home... packing, for me, at least, means chaos.  My mind is in a roller coaster state of torment, excitement, anxiety, anticipation, fear, and just all around freaking out-ittutude.  The house reflects this.  There is stuff everywhere.  Some of it we're bringing.  Some of it we're leaving.  And some of it I have no idea where it came from, so I have no idea where it belongs, so I can't put it away.  Basically our living room and kitchen look like a refugee camp - some flip flops here, an unopened jar of salsa there, tie-died shirts hanging off of the fire place mantel, a plastic hamburger in a suitcase, and an unknown child climbing through the rubbish heaps.  

We're only going to be gone for a week.  To be honest, I'm more worried about the car trip than the week at the rental cottage. Google maps tells us the drive to the town where we're staying on Cape Cod takes 8 hours.  (That's 36 hours in large-family hours.)  We have taken only two road trips since having children.  Both of them happened when we had just three children which translates to "lots of unoccupied space in the mini-van." Now when we travel, we might as well put a sign like this on the bumper:

  
There is no room in the inn.  There is no elbow room.  There is no wiggle room.  There is no room to breath (because the sibling next to you might hear it and start complaining of the noise...)  This could be a scary trip.  Or not.  I really don't know because we've never done this before.

The only thing I can do is be prepared.  And that's what I am.  I think.  I don't actually know if I'm prepared because I have no idea what to prepare for.  You can see my predicament.   

I've stocked up on things that I think count as "preparing" for a long car trip.  I'm going to hit you with the Things I'm Loving for the Road Trip (Seven Quick Takes - Style) and when we get back in a week, I can let you know if they turned out to be as great as I'm hoping or if there really is no way to pleasantly travel in a seven person van with seven people.

(I want to commit to including carb counts for the food and recipes I post here as often as possible.  It makes sense since I need it for Aaron anyway and I'd love for it to be available to any other type 1 diabetes families out there.)

Combine 1 cup of each of the following:
(or 1/2 cup of each if you don't need a ton of trail mix)

peanuts
cashews
almonds
raisins
dried sweetened cranberries
dried sweetened blueberries
milk chocolate chips
white chocolate chips
butterscotch chips

The carb count for this tasty trail mix is 53 carbs per 1/2 cup.  Enjoy!

What a find this was for me!!  We are huge fans of illustrator-crafter Clare Beaton.  I was thrilled when I found these alphabet cards from Mudpuppy featuring her artwork.

Getting these alphabet cards for Clare reminded me that we have these beautiful 1-10 Number Wall Cards from Ee-Boo. 

 I haven't had them displayed for a while, but I really love them.  
I copied them at 60% using our printer (onto card stock), laminated them, and put them on a ring.  So now Clare has a some "homemade" number cards for the trip as well!

A Car Counting Activity and Bar Graph Practice
(free printable!)

Aaron and Dominic have been obsessed with car companies lately.  Russ has taught them the symbols for all the major car companies and most of the minor ones as well.  They can identify makes of cars that I've only remotely heard of.  They greet the neighbors with things like, "I see you have a Subaru.  They are the only car company that puts four-wheel drive on all of their vehicles.  How come you didn't opt for a long-lasting Toyota for easy city driving?"   I'm serious.  They are obsessed.  

The past few months they've been keeping tally sheets of the cars that pass by our house. 
For the road trip, Russ created a new tally sheet with the intention that we'll also use it as a math lesson in disguise.  At the end of the trip we'll turn their information into a bar graph.  On the off change that there are other car obsessed boys out there and moms who want to practice bar graphing... here's a free printable for you :)  (It's just the tally sheet with the company logos.  You're on your own for making a bar graph.  I had wanted to get a bar graph document up here but I've run out of time.  Sorry.)

After I wrote this, my wonderful, generous mother, who knows what it's like to travel in cars with kids, brought us these other great treats for the kids as well!!
